Their Deep Sea Adventure is even easier than my favorite appetizer or light supper. Although a tad more labor intensive, I still prefer to use frozen, raw, jumbo tail-on shrimp because I can stop the cooking process to avoid the “rubbery” texture I’ve found with pre-cooked frozen shrimp. To dip, they recommend prepared Shrimp Cocktail Sauce, Wasabi Mayonnaise, Garlic Aioli Mustard Sauce, Mandarin Orange Chef Sauce and Double Roasted Salsa. I like to make my own sauces. Slow-Grilled Squash
In season now, “while weather is still nice for outdoor dining”, Amelia Saltsman advises in The Santa
Monica Farmer’s Cookbook (©Blenheim Press 2007; available at www.amazon .com) to grill squash slowly on the barbecue “until the outside is crisp but not burnt and the inside is tender and tinged with smoke and spice.” And that is exactly what happens. She also recommends this method with delicate squash; it works well with acorn too!

70s pop music icon and longtime vegetarian, Toni Tennille (The Captain & Tennille) created this recipe
some thirty years ago. What intrigued me then was her use of lentils (instead of pinto beans) and the Bouquet Garnis technique - whole cloves, whole onion, whole garlic and bay leaf – to infuse flavor without disrupting the lentils’ integrity. I’ve lost the original recipe that may have been published in TV Guide. The toughest part was recalling the additional spices so I cheated with prepared taco seasoning. How close did I get? My taste buds enjoyed the reunion and my testers begged for seconds!

Vegetable Shepherd's Pie
Guilt-free, healthy, comfort food with plenty of good-for-you-ratatouille-style veggies! Janet DeGras
won 2ND place in Vegetarian Times' October 2008 Recipe Contest for this dish she calls Unemployed Shepherd’s Pie that showcases eggplant instead of lamb. I tinkered a bit and reduced the fat and cholesterol while increasing the fiber and protein per serving. Total calories and sodium content increased slightly due to the pre-fab products I chose. See comparison at the end of the recipe.
