- In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk and melted butter. Then whisk in the egg and beat the batter until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour about 1/4 cup of batter onto the griddle (use a spatula to smooth out the batter into a circle about 5 inches in diameter). Cook until bubbles begin to form on top; then flip and cook until both sides are golden brown. Serve as soon as possible. (You can keep your pancakes warm in an oven heated to 200 degrees F, covered loosely in aluminum foil.)
