Here in Oklahoma we like bold flavors, and this recipe delivers! I created this recipe using ingredients that are 'made in Oklahoma' and it has been a huge hit with all of my Okie friends. Even if you don't like black-eyed peas, you will love this Spicy Oklahoma Caviar. Enjoy!

Detailed Ingredients and Amounts :
1 c. red onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 clove garlic, minced
2 cans black-eyed peas, rinsed and drained
1 can hominy, rinsed and drained
1 c. of your favorite spicy salsa
Kosher salt and freshly ground black pepper, to taste
Preparation Instructions :
Combine all ingredients in a large bowl. Cover and chill for several hours or overnight to allow flavors to marry. Serve with corn chips or tortilla chips, and enjoy!
