Raw Sunflower Salad with Mustard Greens

Description :

After buying a similar dish at a cooperative market deli, I attempted this in my own way. (Theirs was a bit too sweet for my palette.) Keep this vegan and raw by skipping the rice chips. After trying it again, I vowed to always keep raw seeds and tahini on hand!

Detailed Ingredients and Amounts :
2 cups raw sunflower seeds
1/2 red onion chopped
2 cloves garlic
1 tsp black pepper (fresh ground is best)
1/4 tsp salt
1 tsp honey
1/2 cup tahini
cilantro or parsley, must be fresh
2 tbsp water
squeeze or two (or more) of lemon
Preparation Instructions :
Use a food processor to grind up sunflower seeds, onion, herbs and garlic to a patee-like mash. Coarser is fine too, but must be ground enough for everything to hold together. Remove from processor. Add pepper, salt, water, honey, tahini, and lemon juice. Mix thoroughly. Serve with fresh mustard greens.
