“Silky, sophisticated and simple,” is how food writer, Leslie Brenner described this soup. It was a fave of the “great American lyricist, Mitchell Parrish – he wrote the words to Hoagy Carmichael’s ‘Star Dust’, one of the 20th century’s most romantic and widely covered songs, as well as, “Sophisticated Lady’, ‘Stars Fell on Alabama’, ‘Moonlight Serenade’ and the English version of ‘Volare’.” But she remembers him “as a guy who inadvertently gave her one of her favorite soups.” (1)

2 tablespoons unsalted whipped butter
1 head Bibb or Butter lettuce, about 8 ounces, washed and sliced
1 pound just-picked, fresh peas or a frozen, 16-ounce package
Filtered H-2-O
Finely ground white pepper and sea salt, to taste
1-2 teaspoons fresh chopped mint or lemon zest

Preparation Instructions :
“Saute some sliced Bibb lettuce in butter add young peas, cover with water and simmer, covered for about 40 minutes. Puree, correct seasonings and it’s extremely wonderful – silky and sophisticated as Duke Ellington’s lady, with pure pea flavor. Stir in a little lemon zest or chopped mint at the end, if you like.” (1)
