Crispy, cruciferous creation by the other “J” in J & J’s Bell Pepper Soup! It doesn’t get any easier than this and healthy too. Won “Best Salad” at my 2004 Oscar party!

Detailed Ingredients and Amounts :
Salad:
1 head Napa cabbage, shredded (like for coleslaw)
¼ cup red onion, diced small
1 English cucumber, peeled, seeded and chopped small
The following, to taste:
Dill, dried or fresh
Cilantro, fresh and chopped
Pickled ginger (Eden Selected with Shiso Leaves at health food markets)
Sea salt and pepper

Dressing:
2 tablespoons canola oil
¼ teaspoon sesame oil, optional – great without it
½ cup Marukan Organic Seasoned Rice Vinegar
Preparation Instructions :
Wash and prepare the vegetables according to instructions. Prepare dressing; may be done two days in advance. Dress and serve.
