Canned Chinese Vegetables
Canned Chinese vegetables like baby corn, water chestnuts, straw mushrooms and bamboo shoots can have a "tinny" flavor.
Rinse them and douse them with some rice wine before adding them to remove some of the canned taste.

That’s what the portly officer on Hogan’s Heroes used to tell the commandant. Well, I know something but nowhere near everything
when it comes to cooking and food science. Harold McGee’s revised/updated, On Food and Cooking – The Science and Lore of the Kitchen (Scribner 2004) is my bible. Some may deem it more information than necessary. I say, take what you need and leave the rest behind. McGee’s book is a great gift for the cooks you know and a must have in your library. Read McGee’s Curious Cook column in the New York Times or visit his website www.curiouscook.com.

Pineapple Dissection

Two Egg Whites = One Whole Egg
The demon, cholesterol lives in the yolk. How worried should you be? Depends on what your physician has told you. Dehydrated
egg whites are a staple in my pantry. No bad stuff and 4 grams of protein per serving. Although pasteurized, but unlike liquid egg whites, they lend themselves well to meringues. Read more at my Egg Blog.

Selecting Pomegranates
"In season from September to December, pomegranates are picked ripe. A good pomegranate should have a soft leathery skin
that 'gives' lightly when pressed. Heavy pomegranates are juicer. Avoid fruit with shriveled skin." K. Morse EatingWell Fall 2003. Dr. Richer's Fresh Produce Guide says to "press the crown end. A powdery cloud means it's past prime. Refrigerated, they'll keep for up to 3 months."
