Guilt-free, healthy, comfort food with plenty of good-for-you-ratatouille-style veggies! Janet DeGras won 2ND place in
Vegetarian Times' October 2008 Recipe Contest for this dish she calls Unemployed Shepherd’s Pie that showcases eggplant instead of lamb. I tinkered a bit and reduced the fat and cholesterol while increasing the fiber and protein per serving. Total calories and sodium content increased slightly due to the pre-fab products I chose. See comparison at the end of the recipe.
