70s pop music icon and longtime vegetarian, Toni Tennille (The Captain & Tennille) created this recipe some thirty years
ago. What intrigued me then was her use of lentils (instead of pinto beans) and the Bouquet Garnis technique - whole cloves, whole onion, whole garlic and bay leaf – to infuse flavor without disrupting the lentils’ integrity. I’ve lost the original recipe that may have been published in TV Guide. The toughest part was recalling the additional spices so I cheated with prepared taco seasoning. How close did I get? My taste buds enjoyed the reunion and my testers begged for seconds!
