Dark-Roast Coffee Gelee
Java junkies this is your ticket! Gourmet Magazine (March 2004) notes, "The darker and richer the coffee,
the better (I used Illy). Perk or plunge the coffee but with drip coffee the yield evaporates. Curry powder in the whipped cream topping is strange but delish." I served this in regular coffee cups (four filled half way) or wide-mouth shot glasses (6-8 glasses filled slightly below the rim).

Riccardi is the author of Untangling My Chopsticks: A Culinary Sojourn in Kyoto, a judge on Iron Chef America and contributed this recipe to EatingWell, Oct./Nov. 2005 Riccardi says, "Traditionally, a cutlet is a thin slice of meat cut from the rib section.
