Overnight Crockpot Oatmeal

Tipnut recommendations for successful Crockpot oatmeal. Do a test batch during the day to be sure your Crockpot passes muster. Use the right size Crockpot and ONLY steel cut oats (a.k.a. Irish Oatmeal); never instant or quick-cook varieties. Each serving of oatmeal is 1/4 cup steel cut oats to 1 cup water and a dash of salt, optional. Thicker oatmeal can be achieved with less water and/or more oats. If your Crockpot doesn't have a timer buy and inexpensive appliance timer and start the process while you sleep. The Bain-Marie method - ingredients in a dish that fits inside the Crockpot, then fill the Crockpot with water so the level is half way up the dish - is virtually fail safe.

Vichyssoise - Potato Leek Soup
“Reduced to velvety smoothness” this tried and true, Joy of Cooking recipe is a winner hot or cold.
Sub nutmeg if your spice rack is missing mace as is required with a similar soup by Alice Waters using cauliflower instead of potatoes and water in place of chicken stock.
