Explore and experiment, but respect the cultures from which you borrow. Never make the same thing twice - there's nothing wrong with playing with the tried and true. Don't wait until dinner time to open that bottle of wine. And Tofu is not a meat substitute.
- Favorite Things I Like to Cook:
I spent about 8 hours making mole from scratch last year (with my special partner in cooking escapades). It was a fascinating process of painstakingly peeling, chopping, sauteeing, roasting, toasting, and simmering a counter full of beautiful, fresh ingredients...which then all gets dumped into a blender and is pureed into a thick brown sludge. A truly exquisite and delicious brown sludge, but still...it was 8 hours reduced into pot-full of sludge-like substance. http://www.epicurious.com/recipes/food/views/108056
